In the last years the confectionery production has been influenced a lot from the new laws developed in order to guarantee the safety of the consumer and a self-control from the company on the productive cycles. Laws are those on the HACCP (Hazard Analysis of Critical Control Points), tracking and hygiene. Radio Frequency Identification is suggested as a possible solution to the tracking problems. In the end we analyze an important Italian society: Caffarel. W explain how is the society, it’s production’s flows, and we suggest ways to improve it.
