Abstract
The thesis analyzes the situation of the chocolate field, deepening the thematic of actual interest, with particular attention to the products made up of chocolate. There is a careful analysis of the cocoa market, in which are estimated the volumes of production of the last years, the price and the main world-wide producers. To give an esteem of the importance of this field, is to consider that in the 2002 the ten main world producers have had sales of products made up of chocolate for 36 billions of US $. Subsequently are described the productive flows in order to obtain chocolate, analyzing the methodologies and the machinery used. In the last years the confectionery production has been influenced a lot from the new laws developed in order to guarantee the safety of the consumer and a self-control from the company on the productive cycles. Laws are those on the HACCP (Hazard Analysis of Critical Control Points), tracking and hygiene. Radio Frequency Identification is suggested as a possible solution to the tracking problems. In the end we analyze an important Italian society: Caffarel. W explain how is the society, it’s production’s flows, and we suggest ways to improve it.
